Arroz de polvo malandrinho (Octupus Rice)

Ingredients (2 to 4 pax.):

- 1.2 kg / 2.65 lbs of octupus
- 400 gr / 14 oz. of rice
- 1 big onion
- 2 garlic cloves
- 1 parsley sprig
- 1 laurel leaf
- 1 tomato
- 2 l / 67 fl.oz of water
- 2.5 dl / 8 fl. oz. of olive oil
- salt
- chilli
- pepper


1- Boil the octupus in plenty of water whith a onion inside the water. Pour the octupus water and keep it. Cut the octupus in small pieces.

2- Put a pot on the stove with the olive oil, the chopped onion and garlic cloves, the laurel and the chopped parsley until golden. Join the chopped  tomato with no skin or seeds and stir well.

3- Pour in the octupus cooking water you kept before and join the chopped octupus and the previously washed rice. Season with salt, pepper and chilli and stir it all very well.

4- Cover the pot and let the rice cook under medium fire (don't let it dry nor burn!).

5- Done!
