Miminhos de porco (Pork medallions)

This recipe is one my favorite recipes made by me and I think you will enjoy it.

Ingredients:

- tenderloin pork meat
- 4 garlic cloves
- olive oil
- 4 bacon stripes
- coconut milk
- white wine
- pepper
- salt

1- Cut the meat in big cubes and season with garlic, salt and pepper and leave it marinate in the white wine for at least 2 hours.

2- Cut the bacon stripes in rectangles and fry them with olive oil and garlic, in low heat. When the bacon looks almost tasty put the pork cubes in the frying pan in high heat and as soon as one side is cooked turn them over (it will only take 5 min).

3- Then remove the meat and the bacon from the pan and put the coconut milk, in low heat, for 10 min.

4- Pour the sauce over the pork cubes, sprinkle with parsley and serve with white rice or fried potatoes (not french fries!). Boa refeição!
