Pato com Laranja (Duck with Orange)

This one is actually a french recipe but you can usually see it in portuguese restaurants and slightly different from the french version. Hope you like it!

Ingredients:

- 1 duck
- 1 cup of sugar
- 2 glasses of water
- 2 garlic cloves
- 1 onion
- aromatic herbs
- 3 oranges
- 2 tbsp of butter
- pepper
- salt
- 2 cups of orange juice
- 1 cup of white wine

1- In a bowl put the chopped onions, crushed garlic, herbs, salt, pepper and white wine and let it sit for 1 hour.

2- Clean the duck and put it in recipient with the seasing you prepared in the previous step. Let it sit in the fridge for at least 5 hours.

3- Brush the duck with butter and put in the preheated oven (200ÂșC). When you see it starts to roast, pour the orange juice on top of the duck and cover with aluminium foil and leave it for 1 hour.

4- After 1 hour, shower the duck with the broth.

5- Put the sugar in a frying pan in low heat with a glass of water until its yellow. Take from stove and scrape the 2 oranges to the pan and join another glass of water and let it cook in low heat for 15 min. After that, strain this broth (you don't want to choke on orange scrapes...).


6- Pour this last broth over the duck and cut another orange in slices and decorate the plate as you wish. Bom apetite!
