Açorda de Marisco (Seafood Soup)

This is a very delicious and well known traditional portuguese recipe of seafood soup with bread, from Editorial Verbo (book publisher). Serve with white wine and some good company!


Ingredients (4 pax):
- 500 g / 17.6 oz. of shrimp;
- 500 g / 17.6 oz. of cockles ;
- 500 g / 17.6 oz. of clams ;
- 500 g / 17.6 oz. of bread
- 3 garlic cloves ;
- 4 tbsp. of olive oil ;
- 1 coriander sprig
- 3 eggs ;
- salt ;
- pepper
- chilli


1- Boil the shrimps in enough water and then pour in the water to a recipient and keep it.

2- Boil the clams and the cockles separately, pour in and keep their waters in different recipients.


3- Put these three seafood waters together in a pot and bring it to the stove for a few minutes. Join the bread with this water.


4- Cook the garlic cloves with olive oil until golden and join in a sprig of coriander. Allow it to fry for 1 minute and then add in the bread with the seafood water. Stir with a wooden spoon to obtain an homogeneous and soft soup.


5- Remove the coriander and season the soup with salt, pepper and chilli.

Introduce the cooked seafod in the soup, stir a bit and remove from heat. Join the eggs immediately, stir and serve without delay. Enjoy!
