This is an original recipe of ours. It's a common dish in portuguese restaurants, usually served as an entry. It's great to eat by the pool in a summer afternoon, accompanied with a fresh beer!
Ingredients:
- 4 eggs
- 100 g / 3.5 oz of wild aspargus
- 1 tbsp of olive oil
- 1 tbsp of balsamic vinegar
- Salt
- Pepper
1- Scramble the eggs in a recipient for 2-3 minutes.
2- Cut the aspargus in 1 inch pieces. Add the aspargus to the eggs, as well as a tablespoon of balsamic vinegar.
3- Add salt and pepper as you wish.
4- Put the olive oil on a frying pan over low heat and when the olive oil is thinner join the eggs and aspargus.
5- Stir until the eggs are as you like them. Bon apetit!
